Paraiba Tourmaline
Zultanite
Burmese or Madagascan Ruby
Magnolia or Medina Morganite
Kunzite

Ok, you might think I'm crazy but my wedding set is a large emerald cut emerald in pave' setting surrounded by canary yellow diamonds. I my self thought diamonds were boring and loved the idea that most royalty have emeralds, ruby, and Sapphire engagement/wedding sets.

I like unique rings too. If she doesn't want a regular diamond, how about a black one or pink or canary yellow? I think those are gorgeous. Other gemstones would be just fine, if you find a diamond engagement ring you ( and she) like, you can probably ask to purchase the setting only and get whatever stone put in. Here's a couple links for unique modern rings. Hope you find something you like!

Tourmaline and Moissanite both come in different colors as well as clear. Personally, I don't care for the stone but if that's what she likes here's my idea. Choose the color stone you like...let's say pink. Choose a setting, buy the setting 1 in yellow gold 1 in white gold. Have the rings soddered together. It's like having a double engagement ring in one ring. That's how mine is but with diamonds.

Someone once told me hat Garnets are a stone symbolizing love in India... not sure if that's true or not since I am not indian. However in medieval Britain, a rectangular-cut Emerald was the engagement ring of choice... Especially if it was a blue-star or green-star emerald. This would look great in yellow gold, and would be something about gems she may not even know. Plus it's geometric.

For moissanite, I like this site:

http://www.moissaniteco.com/

And for gem stones, this site is great for rings:

http://www.jewelsforme.com/Home.asp

Plenty of settings to choose from. Look at these collections at Jewels for Me:

http://www.jewelsforme.com/itemlist-main.asp?page=1&category=Rings&Style=4&GemType=01

http://www.jewelsforme.com/itemlist-main.asp?page=1&category=Rings&Style=3&GemType=01

She might like these Moissanite rings:

http://www.moissaniteco.com/square-baguette-3stone-halo-moissanite-engagement-ring-p-8387.html

Also, moissanite comes in colors:

http://www.moissaniteco.com/fancy-colored-moissanite-c-164.html

You can have a colored moissanite put in the center of one of the rings if you so desire.

OOH FUN!

Garnets actually can be really interesting. They come in all colors - start looking into Tsavorite Garnet (green) and Malaya Garnet (pinkish/red). Blue sapphires are my favorite stone in the world. Also, spinel is a very hard/durable stone which comes in a variety of colors and it tends to be pretty affordable.

Take a look at the stones on Jeff White's website (he is a master stone cutter). You could even commission him to custom cut a stone for you.
http://www.whitesgems.com/cutgems1.htm

For inspiration, here are links to some of my favorite colored center stone rings (they do all have diamond accents):

Sapphire: http://www.artofplatinum.com/4images/details.php?image_id=452

Emerald: http://www.artofplatinum.com/4images/details.php?image_id=276

Tsavorite (scroll down to second post): http://www.pricescope.com/idealbb/view.asp?topicID=46513

Quite possibly the prettiest sapphire ring EVER: http://www.pricescope.com/idealbb/view.asp?topicID=75275

Look for the perfect stone first and then start to consider the setting. You'll also want to seek out good custom jewelers to possibly design your setting.

Have fun with this and congratulations!!!!

Edit: Regarding moissanite, I wouldn't recommend it. Its normally considered a diamond substitute for people who cannot afford or do not want to pay the price of a genuine diamond. It often has a gray/green tint which is not attractive. Its also created in a lab. If your girlfriend likes color, I think you should go all out and get her some real color, not a cheap diamond substitute like moissanite.
